White Chocolate contains all the ingredients of the chocolate but no cocoa solids. As Cocoa solids is responsible for the brown color of the chocolates.
There are various jobs in order to make the chocolate. The first job is of the chocolate makers who use harvested cocoa beans and other ingredients to product couverture or compound chocolate. Chocolatiers like us use finished couverture to make chocolate. Few chocolatiers use compound chocolate as well to make chocolate bars or candies.
Different types of chocolate is made by blending of cocoa butter in varying quantities to make different types of chocolates. For example, Dark Chocolate primarily contains cocoa butter and sugar. Milk Chocolates contains all the ingredients of dark chocolate plus milk or milk powder. White chocolate contains sugar, cocoa butter, milk or milk powder and vanilla. More ingredients are added to change the flavor and develop own signature chocolate.
The process of making chocolate is completed with tempering.
